QUINOA SALAD

YOU WILL NEED:
1/2 cup Quinoa
1/4 of a Cucumber
1/4 of a Pepper
1 Shallot
8 Cherry Tomatoes
1/2 a Lemon
Fresh Cilantro
Olive Oil
Salt & Pepper
This is one of my go-to salad recipes because it is absolutely delicious and easy to prepare; a winning combination in my books!
To start you need to boil the quinoa which usually takes about 15-20 minutes. While the quinoa is boiling, finely dice the cucumber, pepper, and shallot and cut the cherry tomatoes into quarters. Once the quinoa is finished boiling rinse under cold water and then drain. Combine the drained quinoa with your diced ingredients into a mixing bowl.
Personally I season this salad to suit my tastes so I don't measure out exact quantities for seasoning: however for the sake of this recipe I'll "guesstimate." Pour about 4 Tbsp of olive oil into the salad and mix. Then cut a lemon in half and squeeze it over the salad as well. Add salt and pepper to taste (I use freshly ground salt & pepper but you can use shakers as well.) Pour your salad into a serving bowl. Finely chop about a tsp of fresh cilantro and finish your salad by garnishing the top with cilantro and freshly grated lemon zest. Enjoy!
